MINI BUNNY SANDWICH COOKIES

Spring is in the air, and what better way to celebrate than with adorable, bite-sized treats that are as fun to make as they are to eat? These mini multi-colored bunny face sandwich cookies are the perfect addition to your Easter brunch, spring party, or just a cozy afternoon baking session. They’re colorful, whimsical, and oh-so-delicious!

INSTRUCTIONS

1. Whip up a batch of our perfect cut out sugar cookie dough and divide into 4 parts. Color each dough a different color, we used pink, mint green, sky blue, and lavender. Chill dough for at least an hour.
2. Roll out your dough and cut out your mini bunny faces. Bake and let cool.
3. Make a batch of your favorite buttercream frosting. Color a light sky blue, adding just a few drops at time until your achieve the perfect shade.
   
4. Fill a piping bag fitted with number 4 round decorating tip.
5. Pipe an outline on a cookie, and fill. Place another bunny cookie on the top to make a sandwich.
6. Roll your cookie sandwiches in a blend of color coordinating non-pareils.
