Knock your friends sock off with the most lovely candy apples they ever did see! After apple picking one fall day we were inspired to try making candy apples a pretty shade of turquoise, and now we want to make them every color of the rainbow! Switch the turquoise for any other color gel paste food coloring, but stick with the bright white coloring in your recipe to make the candy coating opaque. Enjoy!

Supply List
• 6-8 small apples
• 1/2 cup light corn syrup
• 3 cups white sugar
• 1 cup water
• 6 drops flavoring oil, we used raspberry
• 1 TB bright white gel paste food coloring
• 1 tsp turquoise gel paste food coloring
• 6" paper lollipop sticks
• Candy thermometer
• Medium sized pot with handles

Grease a cookie sheet with shortening and set aside. Once your apples are washed and dried remove any stems and insert the lollipop sticks. Make sure they are are nice and snug. You don't want your apples falling off!

Combine the corn syrup, sugar, and water in your pot and attach your candy thermometer. Cook over medium-high heat and stir to dissolve the sugar. You want the sugar to dissolve before the candy boils.

Increase to high heat if needed to bring the candy to a boil. It will take 10-20 minutes to reach 290 degrees. At this temperature the candy will be a little soft once cooled. If you want a hard candy coating heat to 302. Avoid stirring once the candy boils.

Once the temperature has been reached, remove the pot from the burner, add the flavoring and stir gently. Add the bright white coloring first, and then the turquoise. Stir gently until well mixed.

Mixture will be VERY HOT so be very careful to avoid a burn.

Working quickly dip the apples into the syrup one at a time. Twirl until completely coated. Let excess syrup drip back into the pot and then place on your greased cookie sheet.

• Tip • Use apples from an orchard if possible. The wax on store bought apples can make it difficult for the candy to stick. If using store bought apples dip them in boiling water and wipe with paper towels in effort to remove the wax.

To serve your candy apples place in baking cups. To give your gorgeous candy apples as gifts wrap place them in a cello bag and tie off with bakers twine. Candy Apples should be eaten within 2-3 days.
