Anyone and everyone would love a rainbow cake for their special day, its such a happy cake! We made this cake without a whole lot of layer cake making experience and you can too!
We used 2 white cake box mixes (each makes 24 cupcakes) and had enough batter left over to make 2 cupcakes in each color of batter. We baked and froze those 12 cupcakes to save for later use. We loved how the cake turned out, but it was a lot of cake, so you could also use only 1 box of cake mix. Prepare your cake batter as you normally would by following the directions on the boxes. Divide your batter into 6 bowls. Stir about 4 or 5 drops of food coloring into each bowl of batter. Grease and lightly dust with flour however many 8" cake pans you have. We had 3. Pour 1 cup of batter into each prepared pan and bake at 350 degrees for about 14 minutes.
Let the cake layers cool for at least 5 minutes in the pans then invert onto a cooling rack. Wash your pans and repeat until all your cake layers are baked. Once cooled wrap in plastic wrap and freeze. Using frozen cake layers makes it much easier to assemble your cake.
To assemble your cake make up a batch of your favorite frosting and tint using one of your gel paste food colorings, or leave natural white. Starting with an 8" cake board place a frozen cake layer on it. Spread an even layer of frosting, add your next cake layer, and repeat until you've assembled your rainbow. Finish your rainbow cake by swirling on a generous layer of frosting on the top and sides. Top with a few rainbow sprinkles and rainbow candles to hint at whats inside! Enjoy!
