Layer Cake Shop Lunch Box: Pretty Pink Garden September 08 2013, 0 Comments

Little miss Olive started Kindergarten this year and that means my 17 year career as a school lunch maker has begun! I'm honestly very excited! Putting together cute little lunches has always sounded like fun to me! If you take a look through Pinterest you'll find a ton of amazing school lunch makers out there, but I'm most excited about simple to make lunches that are colorful, healthy, and make Olive smile.

As lunch ideas were coming to me I realized they all used supplies I already had on hand from the shop, and the Layer Cake Shop Lunch Box was born!

In this pretty pink garden lunch box I packed kiwi, pink yogurt pretzels, a mini whole wheat bagel with cream cheese, and cucumbers. I skewered some of the fruits and veggies with Lily of the Valley Picks and Grass Picks, so cute! I placed a few Bright Pink Polka Dot Baking Cups under the bagel and pretzels, and round out the lunch with a pink napkin, pink fork, and a Light Pink Stripe Paper Straw.

Glittering Hot Pink Chocolate Hearts May 07 2013, 1 Comment


We've  been wanting to give glittery chocolates a try so this week we went for it. First Lori tried brushing the chocolate mold with disco dust before filling with chocolate, but we weren't very excited by the results.  Lori then tried brushing the chocolate hearts with hot pink disco dust after molding, and that worked wonderfully!

These gilttery chocolate hearts would make some really gorgeous toppers for cupcakes, cakes, or even ice cream sundaes!

We have a serious love for all things Jadite here at Layer Cake Shop.  If you're not familiar, its a beautiful milky mint green glass that many serving pieces, mixing bowls and vases were made from beginning in the 1930's.  Fire King popularized Jadite in the 1950's when it started producing a heat resistant line.

I've been wanting to try a chocolate Jadite muffin tin and spoon forever, and I'm so glad Lori was finally able to make it happen! I turned out so cute and when paired with mini chocolate cupcakes it makes the perfect little edible baking set!

Lori made this oh so sweet fawn this week, and I just love his simple details! She added the white spots to the inside of the mold before filling with peanut butter candy melts, and the eyes and nose using a brown edible ink marker.  Wouldn't this make a stunning cake topper!

Ring in spring with super cute bright yellow chocolate marshmallow tulip lollipops! These were so easy to make and look pretty adorable!

1. Poke a small hole in the center of your mini tulip baking cups 2. Push regular size store bought marshmallows onto paper lollipop sticks. 3. Melt your yellow candy melts in a container so that the chocolate will be deep enough to cover the whole marshmallow in one dip. 4. Dip your marshmallows making sure that the whole marshmallow gets coated. 5. Tap the stick on the rim of your container to get rid of excess candy melt. 6. Poke your stick through a baking cup and push the baking cup up under the marshmallow. 7. Push into a block of white craft foam or cake pop holder to let dry. 8. Once dry, cut some little green paper leaves. We adhered them using glue dots.

Penelope's Cowgirl and Indians Birthday Party November 28 2012, 0 Comments


My cute-as-a-button baby Penny turned 1 whole year old recently and we celebrated with a Cowgirls and Indians Party!


Penny wore a vintage dress, white tights, gifted moccasins and a beautiful feather headband crafted by her truly talented Nina.  It was made from the softest leather and turkey feathers from her Great Grandpa.  Surprisingly she kept it on for the first half of the party, success!

Isn't she the worlds most beautiful baby!  Just look as that bundle of sweetness!

The cowgirls and indians theme was inspired by Penny's Great Grandma, GG, who is from Colorado and as luck would have it would be in town for the party.  GG was born and raised in Cowgirl country and is part American Indian.  Why not celebrate it!

I printed the invitations on a light pink card stock and mailed them in Light Pink Chevron Stripe Paper Bags from the shop.

I love to repeat design elements in a party.  It gives it a cohesive look and also makes the decorating process simple!  I loved the little feather design on the invitation so I blew it up and printed them larger on pink card stock. I spent one evening in front of the tv cutting them out.  Wanting to involve Olive, she loves to decorate, we decided to glue and glitter them with some light pink glitter I had leftover from another project.  We did this one morning before preschool and she felt really proud.

I used our pink feathers all over the party!  They were made into a garland, hung as a backdrop, and slipped into flower arrangements.  Simple ideas that make big impact are my favorite!

Party favors that can also double as decorations are a big win in my book!  I made these simple and cute favors using jars, pink fabric, jute twine that I already had, and Light Pink Sixlets from the shop.  All I had to buy were pretzels.  I spent another evening watching tv while cutting out the fabric circles, and the next day my family put them all together assembly style in about 15 minutes.

The Cowgirls and Indians theme was planned way in advance so I had time to collect a few toy horses from thrift stores and actually found bags of farm animals at the grocery store for about $2 each!


When I envisioned this party fresh flowers just seemed to belong.  I've actually never really considered using flowers as party decor before, especially a child's birthday.  I sourced a local shop where I could get bunches of individual flowers and make my own arrangements pretty affordably.  I purchased 6 bunches for $24 and was able to make 8 arrangements.  I thought they looked stunning and were a great value.


I draped burlap over the buffet tables and spread a little pink confetti on them.  The tables were set with a variety of white serving dishes I've been collecting and pink paper dinnerware.

I made Penny her own little teepee cake and horse cupcakes for the guests.  There are a handful of memorable crafty moments in my life and making this teepee cake was one of them.  I was a little nervous how it would go, but it turned out to be one of my favorite edible things I've ever made!

Nina made the arrow cutout cookies for the party, aren't they cute!

I had so much fun putting together an autumn s'more party this week! It was filled with sweet autumn flavors, cozy blankets, a warm crackling fire, crisp autumn air, laughter, and good friends. I created chocolates for our s'mores in flavors inspired by autumn. Dark Chocolate Salted Caramel, Orange Spice, Butterscotch Toffee, and Caramel Apple. They all tasted just like autumn, and we each had a different favorite! Yum!


Dark Chocolate Salted Caramel = Dark Chocolate Candy Melts + Caramel + Sea Salt
Orange Spice = Orange Candy Melts + Red Candy Melts + Orange Flavoring Oil + Cinnamon Flavoring Oil + Clove Flavoring Oil
Butterscotch Toffee = Butterscotch Candy Melts + Toffee Crunch Topping
Caramel Apple = Light Green Candy Melts + Apple Flavoring Oil + Caramel




It just warms my heart whenever we get to use our cute vintage orange fireplace!



Hooray for autumn s'mores!

To make your own autumn s'more chocolate simply melt your candy melts in the microwave 15 seconds at a time. Do not overheat! Stir in flavoring oil 1-2 drops at a time until you love the flavor. Pour into a disposable decorating bag and secure with a rubber band. Snip the bag tip and pipe square shapes onto parchment paper. Sprinkle with desired toppings. Enjoy!

Butterscotch Owl Pops September 28 2012, 1 Comment



Owls, butterscotch and autumn just seem to go together don't you think? Every autumn I get the urge to make things featuring woodland animals!

This is my first time working with butterscotch candy melts, new to our shop this year, and oh my.. they are so incredibly sweet and yummy! Perfect for these little owls! I found the butterscotch candy melts a bit stiffer when melted than others, so I would consider them much more ideal for molding rather than dipping.


I think my very favorite use for bakers twine is tying sweet bows on chocolate lollipops!

Follow our Basic Chocolate Molding Tutorial if you’re new to chocolate molding.

Tips: Roll the lollipop stick once in the mold to coat the whole top of the stick with chocolate, this makes the stick more secure. Get yourself more than one mold if you plan to make a lot, waiting for the chocolate to harden can become time consuming.

I've seen a handful of pink lemonade desserts floating around Pinterest lately and just couldn't get them out of my head. Pink lemonade + cake + frosting just sounds so incredibly good! Olive and I gave pink lemonade cupcakes a whirl and they did not disappoint!

We added 3TB of Country Time powdered pink lemonade mix to our favorite vanilla cupcake recipe (which yields 12 cupcakes) and that seemed just right. We also added 3TB of the same lemonade mix to our favorite decorator frosting, but it was a little intense. I would recommend starting with 1 TB adding more to taste.

We Tinted our frosting and white jimmies with just a touch of soft pink gel paste food coloring. Check out our Custom Color Sprinkles post for more detailed instructions.

Topped with a light pink stripe paper straw(cut in half), we think they look sweet and refreshing just like the real thing.

As promised here is my delicious peach doughnut recipe. I've tried a few different baked doughnut recipes in the past and so far this our family favorite. Unlike previous attempts these doughnuts turned out really moist and seemed to closer resemble a fried doughnut. I've been trying out more vegan baking recipes lately because Josh is allergic to dairy and eggs, so these doughnuts happen to be vegan. Bake some for your vegan and non-vegan friends alike, nobody will be disappointed!

If you are a fierce doughnut fan you may have a problem with baked doughnuts. Is a doughnut really a doughnut if its baked and not fried? Well I'm not entirely sure, but considering that I don't personally find home doughnut frying very appealing and these are so very yummy, I'm calling them doughnuts. Delicious doughnuts!

Peach Doughnuts
Make 6 Standard Size Donuts

Dry Ingredients:
1 Cup All Purpose Flour
1/2 Cup Sugar
1 1/2 tsp Baking Powder
1/4 tsp Salt
1/4 tsp Pumpkin Pie Spice
1 Pinch Cinnamon

Wet Ingredients:
1/2 Cup Soymilk
1/2 tsp Apple Cider Vinegar
1/2 tsp Pure Vanilla Extract
2 TB Applesauce
4 TB Smart Balance
3-4 Drops Peach Flavoring Oil

Combine dry ingredients and whisk to mix thoroughly. Combine wet ingredients in a small sauce pan and stir over low heat until smart balance is melted. This mixture should NOT get too hot, just warm enough for the smart balance to melt. If the mixture gets too hot, let it cool before moving on.

Add the wet mixture to the dry mixture and mix until just combined. Because this mixture does not contain eggs you can taste a little bit of the batter to see if it has enough peach flavor. Keep in mind that the doughnuts should have a subtle peach flavor and the glaze a more intense peach flavor. Go ahead and add more peach flavoring oil if you think it needs it, just a couple drops at a time. A little really does go a long way when it comes to flavoring oil!

Grease your doughnut pan really well with cooking spray. These doughnuts are so moist that if your doughnuts stick to the pan at all they may rip while trying to remove them. Fill each doughnut pan cavity with batter up to about 1/4" under the rim. Its better to under-fill, rather than over-fill when it comes to baked doughnuts. If you over-fill your doughnuts with have an unsightly ridge around the middle of them. I like to call it doughnut muffin-top, and its not so pretty.

Bake for 12 minutes at 350º F. You don't want them to brown, but you can use the toothpick test to judge doneness. An inserted toothpick should come out clean. Once done, invert over a cookie sheet covered with parchment paper and carefully nudge them out if they need help. I don't recommend cooling them on racks because they are just so moist that they tend to sink into the cooling rack.

Now your ready to set up your glazing station! Set up a bowl for the glaze, then a bowl of sprinkles, and lastly a cookie sheet lined with parchment paper.

Peach Glaze
1/2 Cup Powdered Sugar
1 Tbs Soymilk
4-6 Drops Peach Flavoring Oil
2-4 Drops Peach Gel Paste Coloring
1/2 Cup Sprinkles (click here for a Custom Color Sprinkles tutorial)

Whisk soymilk and powdered sugar together. Add the peach coloring a drop at a time until you love the color. Add the peach flavoring oil 2 drops at a time until you think it has just the right amount of peach flavor.

Dip the the nicer looking side of your doughnut into the glaze, let some drip off, then dip glaze-side down into sprinkles. Transfer to your parchment paper lined cookie sheet. Admire your pretty doughnut for a moment, then repeat with the remaining doughnuts.

Custom Color Sprinkles April 16 2012, 5 Comments




I would probably file this technique under "Color Obsessed Bakers". If you're not a color obsessed baker feel free to roll your eyes at the thought of custom coloring your sprinkles. I'm okay with that. I am however, quite color obsessed and my baked goods are no exception. I really wanted shimmery peach sprinkles to sprinkle atop Olive's birthday doughnuts recently, and because I have never been able to find pastel sprinkles to sell in the shop, I set out to make my own. I turned out to be extremely easy!

I started with white jimmies in a zip-top plastic baggie with plenty of room to move the jimmies around. I was hoping for pastel sprinkles so I used the teeniest amount of gel paste food coloring applied to the inside of the bag. I massaged the sprinkles around in the baggie and after a while the coloring evenly distributed itself really well and I was ecstatic with the pretty pastel colors!

I also experimented with creating pearly sprinkles and glittery sprinkles. For sprinkles with a really pretty pearly luster, pour your sprinkles in a small bowl and stir in a tiny bit of luster dust. Keep stirring until evenly distributed. For glittery sprinkles, add a tiny bit of disco dust into the plastic baggie along with your food coloring.

The peach jimmies above are a mix of 3 different batches I colored. When you use this technique the coloring distributes very well and all the jimmies turn out the same color, but in this case I wanted a varied look.

I'm in love with coloring my own sprinkles and if you are an avid baker with a large selection of gel paste food coloring, this technique is for you! Get yourself a bulk bag of white jimmies and whip up the prettiest sprinkles you ever did see!

Spring has spring around here!  The tulips are popping, Olive and I are rockin our windbreakers, and I'm reviewing my sandals wish list. I love living in the midwest for a bunch of reasons, but my favorite thing about the midwest is the drastic season changes. I tend to get restless and I find myself thriving on the fresh inspiration I get from those season changes. For example right now I'm totally inspired by pastels, lemons, pretty dresses, florals, light jackets, bows, glitter and shimmer.. but not too long ago it was 80's stocking hats and plaid. You get the idea.

And.. spring just happens to be my favorite season! I love pretty springy colors, the promise of nice warm weather, and its the month of Olive's birthday.. and mine! So if spring isn't your favorite season, I think you should reconsider. I mean really, who doesn't love stomping in puddles with rain boots?

To get you in the springy mood how about making yourself some easy peasy spring daisy cupcakes? They are so tiny and cute you could surely eat quite a few without feeling guilty.

Pom Pom Fringe Drink Toppers March 20 2012, 19 Comments



Yet another fun way to use cute baking cups.. festive fringy drink toppers!

I love the look of polka dot baking cups for this project, they have a confetti feel to them. To make your own pom pom fringe drink toppers, flatten standard size baking cups and fold into quarters. Cut off the very tip to make your center hole, and cut fringe around the outside edge. Scrunch up the fringe a little, unfold, and slid onto a cute paper straw. I used 4 baking cups per straw.
